Steps for making Northeastern stew

Pork ribs are optional for meat lovers; the vegetarian version can omit them.

I used white string beans, which taste even better when stewed.

Remove tendons

Wash the ingredients

Blanch the pork ribs. Fresh ribs don't need blanching, just stir-fry them directly. Frozen ribs only need blanching briefly; just add cooking wine to save time.

Cut potatoes into chunks

Break the green beans into pieces that fit your needs.

Prepare scallions, ginger, and star anise for stir-frying.

Heat oil in a wok, add scallions, ginger, and star anise, and sauté until fragrant. Add the pork ribs and stir-fry until they turn brown. Add a little soy sauce and a splash of dark soy sauce, then add hot water to cover the ribs. Once the water boils, reduce heat and simmer for 20 minutes.

After the ribs have simmered for 20 minutes, add the potatoes, green beans, tomatoes, and corn in that order. Simmer for another 20 minutes, then add the bell peppers and simmer for another 5 minutes.

Turn off the heat, start eating! Served with rice, we ate one after another without making a sound.
