Steps for making braised beef tendon

Ingredients: Beef tendon brisket, ginger, scallions, rock sugar, ginger, star anise, bay leaves, cinnamon, dried chili peppers, Sichuan peppercorns, cardamom, broad bean paste
Sauce: 1 tablespoon light soy sauce, a little over 1/2 tablespoon dark soy sauce, 1 tablespoon satay sauce

Blanch the vegetables in cold water with ginger, scallions, and cooking wine, then drain.
Heat oil and add rock sugar to caramelize.
Add beef and stir-fry until browned.
Add 1 spoonful of fermented soybean paste and stir-fry until the oil is released.
Add the spices and sauce to the pan and stir-fry.
Add enough water and pressure cook for 60 minutes.
Add a little green pepper to thicken the sauce.
