Steps for making braised beef ribs

Prepare the ingredients: beef short ribs, ginger and scallions (blanched), ginger, scallions and garlic, star anise, cinnamon and bay leaves, cardamom, hawthorn slices, and rock sugar.
Sauce: 1 tablespoon fermented bean paste, 2 tablespoons light soy sauce, 1 tablespoon dark soy sauce, 1 tablespoon cooking wine, a pinch of white pepper powder

Blanch beef short ribs in cold water with ginger, scallions, and cooking wine.
Heat oil in a pan and add rock sugar to caramelize.
Stir-fry the beef short ribs
Stir-fry with sauce and all ingredients.
Add enough boiling water to cover the ingredients, simmer for 1 hour.

Reduce the sauce over high heat
