Steps for making spicy chicken feet

Spread out the chicken feet and remove the nails.

Blanch with ginger and cooking wine (or white wine)

After boiling, cook for three minutes, then remove and rinse off any scum.

Add water

Add cinnamon, star anise, bay leaves, dried chili peppers, and ginger slices (to remove fishy smells and enhance aroma).

Add light soy sauce, dark soy sauce, and rock sugar, then braise.

Boil for 20 minutes, or pressure cook for 3-4 minutes.

Take out the chicken feet

Preserve the original broth

Sauté dried chili peppers and garlic in oil, then add a little chili powder.

Add the chicken feet and stir-fry.

Stir-fry until dry

Add light soy sauce, oyster sauce, and salt, then stir-fry until fragrant and flavorful.

Add original juice

Continue cooking for 3 minutes

Reduce the sauce over high heat, then add a little chicken bouillon.

Add some chopped scallions before serving.
