Steps for making stir-fried soybean sprouts with tofu

Pour oil into a pan and heat it to about 70% of its maximum temperature. Cut the firm tofu into appropriately thick slices and fry them in the oil over low heat until golden brown. I fried them for about 5 minutes on low heat. You can also buy pre-fried tofu or fried tofu directly from the store.

As shown in the picture, cut the tofu into strips, green bell pepper, and carrot into shreds after washing (red bell pepper would be even better! But red bell pepper is too expensive here... so I used carrot instead). Wash the bean sprouts and cut the scallions into sections (separate the white and green parts). Slice the garlic cloves and cut the chili peppers into rings.

Heat oil in a pan, then add chopped chili peppers, sliced garlic, and white parts of scallions. Sauté until fragrant (don't use too high a heat).

After sautéing the aromatics, add the bean sprouts and stir-fry over medium-high heat for 1-2 minutes.

Add shredded carrots and green bell peppers, stir-fry evenly.

Stir-fry until the bean sprouts are slightly wilted, then add the chopped tofu strips.

After stir-frying evenly, add the seasonings: salt, chicken bouillon, and you can also add a pinch of thirteen-spice powder.

After 1 minute, add enough water to cover half of the ingredients, then simmer over medium-high heat.

Add a touch of oyster sauce; if you prefer a darker color, add a little dark soy sauce, but it looks great even without it.

When the sauce has almost evaporated, add the chopped scallions, stir-fry evenly, and it's ready to serve.

Remove from heat and plate
