Stir-fried baby bok choy with pickled chili peppers (with pork belly) - recipe steps

Cut the baby bok choy into large strips

Separate the vegetable stalks and leaves; put the stalks in first, then the leaves.

Chop the bird's eye chili and garlic into small pieces, and dice the tomatoes.

Sear the skin of the pork belly and then slice it. This step is crucial; if you don't sear it or use pork belly without skin, it won't taste as good.

Add the pork belly to the pan without oil and render the fat. If the pork isn't fatty, you can add a little cooking oil.

Add garlic and chili peppers and stir-fry until fragrant.

Add pickled chili peppers and stir-fry for another minute.

Adding tomatoes 🍅 enhances the flavor and makes it delicious.

First add the baby bok choy stalks, stir-fry them until they soften, then add the leaves.

If you don't like it too soft, stir-fry it to this consistency.

I prefer mine a bit softer and more tender, so it absorbs the flavors really well. Stir-fry over high heat for about 10 minutes.

Add chili powder and salt. You can add a little salt, because the pickled chili peppers are also salty. I added about one small spoonful of seasoning.

Finally, turn off the heat, add some chopped green onions and cilantro, and stir it a bit.

Tips for stir-fried baby bok choy with pickled chili peppers (with pork belly)
1. I usually use large, yellow-hearted baby bok choy because it's juicy and sweet. Regular bok choy and smaller baby bok choy are also fine. 2. I bought the pickled chili and chili powder from Pinduoduo. They all taste pretty much the same, so I don't have any particular recommendations. If you can't handle spice, use less. The amounts for both are the same as a regular rice spoon. 3. It's best to choose fatty pork belly. Make sure to sear the skin. If you don't have a blowtorch, you can rub the skin on the bottom of the pan; it'll smell delicious. 4. Don't make this if you don't eat spicy food! This dish is quite spicy!
