Steps for making braised water eel

Wash the water lily thoroughly, remove the internal organs, cut it into sections and set aside. Try to rinse off as much water as possible.

Material preparation

Add lard

Add onions, ginger, and garlic and stir-fry until fragrant. Then spread them at the bottom of the pan.

Pour in water

Spread the water over the onions, ginger, and garlic.

Pour in a little cooking wine

Add dark soy sauce

With salt

Pour in more cooking wine than the first time. At this point, you can also add some light soy sauce and a dried chili pepper (optional if you don't like spicy food).

Cover the pot and simmer for a while.

Open the lid and check the moisture content.

Add scallions

After covering the pot, you can lift it up and shake it to check the moisture level and prevent sticking.

After simmering for a while, uncover and reduce the sauce. Enjoy!
Tips for braising water chestnuts
Remove the head, tail, and internal organs from the eel. Be careful as the gills can be a bit prickly. If you're worried about it drying out, you can add a little water. Just cook it a little longer when reducing the sauce.
