Clean the Agaricus blazei thoroughly, removing any roots that are too muddy. Squeeze out the excess water, then slice vertically, making 3-4 slices from each mushroom. Prepare two scallions; chop the green parts into small pieces and the white parts into long sections.

Stir-frying in a large iron wok makes it even more fragrant: Heat the wok with plenty of oil. Add long sections of scallion whites and fry slowly over low heat. Fry the scallions until they are slightly golden brown, then remove and discard the scallion sections. Turn off the heat.

Turn the heat to high, add the Agaricus blazei mushrooms, and stir-fry (you can also pan-fry them over low heat). Stir-fry until slightly golden brown and the moisture has evaporated. Add a spoonful of light soy sauce, slowly adding it along the edge of the pan. (If you prefer a stronger flavor, you can add two spoonfuls; no need to add salt, the flavor is sufficient.)
