Steps for making stir-fried snow peas and yams

Remove the ends from the snow peas, slice the yams and carrots, and add scallions and garlic.

After the water in the pot boils, pour the vegetables from the plate into the boiling water and blanch them for about one minute.

Take them out and rinse them in cold water (this is to make the vegetables crisp and refreshing).

Make a sauce: Mix 1 teaspoon cornstarch, 1 teaspoon salt, a pinch of MSG, and 6 teaspoons water until smooth.

Heat oil in a pan, then add scallions and garlic.

After sautéing the scallions and garlic until fragrant, add the vegetables and stir-fry for about one minute. Pour in the prepared cornstarch slurry and stir-fry for another ten seconds.

The blanching and stir-frying times should not be too long; this dish is meant to have a crisp texture.
