Steps for making homemade pickled fish

You can ask the fishmonger to clean the fish by splitting it in half, removing the bones, and washing the head. Set it aside to soak in water first.

Soak the fish slices in water for a while.

Marinate the ingredients for 15 minutes, tossed with salt, scallions, ginger, and pepper. Then toss with an egg white, followed by cornstarch, and finally a little oil to lock in moisture.

Chop cilantro into sections and cut tofu into cubes.

Wash the pickled cabbage and blanch it.

Blanch bean sprouts and set aside.

Heat oil in a wok and sauté the pickled cabbage until fragrant. Sauté ginger slices in the same oil until fragrant. Wipe the fish bones and head dry and pan-fry briefly. Add the pickled cabbage and stir-fry. Pour in boiling water and bring to a boil for 5 minutes. Reduce heat and add bean sprouts and tofu one by one, then add the marinated fish slices. Bring to a boil again, then sprinkle with scallions and cilantro. In a separate wok, heat oil and sauté minced garlic and sesame seeds until fragrant. Pour this over the fish and serve.
