Steps for making stir-fried amaranth at home

Choose: Amaranth leaves should be fresh and reddish-green.

The vegetable stalks are quite sturdy.

The vegetable roots are red and the rootlets are clean. Remove the old stems and wash with clean water.

Ingredients: Garlic sliced.

Peel the duck eggs and preserved eggs, and cut them into small pieces for later use.

Blanching: Pour about half a pot of water into a pot, add 1 teaspoon of salt and 2 drops of cooking oil. After the water boils, add the amaranth and blanch for 30 seconds.

Use a slotted spoon to scoop out the amaranth, put it in a basin of cold water to cool it down, drain the water, and then cut the amaranth into sections.

Stir-fry: Heat the pan and pour in an appropriate amount of oil.

Sauté garlic slices.

Pour the diced preserved eggs and salted duck eggs into the pot.

Stir-fry preserved eggs and salted duck eggs.

Add the amaranth segments and stir-fry evenly.

Pour in an appropriate amount of boiled water, or meat broth for a more fragrant flavor, and bring to a boil. (Add salt to taste; since there are salted duck eggs, those who prefer a lighter flavor can omit the salt.) Stir the vegetables and eggs well, then serve.
