Smash the garlic cloves, cut the chili peppers and scallions into sections, and slice the ginger. Tear the cauliflower into small florets, soak them in lightly salted water for a while, then rinse them clean and set aside.

Heat a pan with a little oil, add the cauliflower and stir-fry, adding a pinch of salt. Cook until the cauliflower is slightly browned, about 3 minutes. Remove from the pan and set aside.

Pour in some oil and stir-fry the pork belly over the lowest heat until the oil is rendered and the meat is slightly browned.

Add scallions, ginger, garlic, and chili peppers and sauté until fragrant.
Add the cauliflower and stir-fry for half a minute. Pour in the seasonings. If you want it drier, you can omit the water. If you want it with more broth, add two or three tablespoons of water. Stir-fry evenly and it's ready to serve.
