Steps for making braised beef

Cut the beef into chunks, soak it in water to remove the blood, and then rinse it off.

Put the beef in a pot of cold water, and skim off the foam with a spoon after the water boils.

Remove the blanched beef and drain it.

Heat oil in a pan, add rock sugar, and stir-fry over low heat until the rock sugar melts. Add the blanched beef and stir-fry until the beef is slightly yellow. Add light soy sauce, dark soy sauce, oyster sauce, and sweet bean sauce and stir-fry until the beef is colored. Then add scallions, ginger, garlic, star anise, bay leaves, and small red chilies.

Pour in an appropriate amount of boiling water, bring to a boil over high heat, then reduce to medium-low heat and simmer for about 70 minutes. Add an appropriate amount of salt to taste.

Simmer for another 15 to 20 minutes to thicken the broth, which will make the beef more flavorful.
