Chicken, wood ear mushroom, and vermicelli salad - a refreshing, low-fat home-style dish - recipe steps for chicken breast, shiitake mushrooms, wood ear mushrooms, carrots, and corn.

Soak dried wood ear mushrooms and shiitake mushrooms until softened, then wash them thoroughly with flour. Drain the washed wood ear mushrooms and cut them into thin strips.

Dice the shiitake mushrooms, cut the corn into kernels, mince the shallots, and shred the carrots.

❤️Prepare the filling: Chicken breast is lower in calories, while chicken thigh meat has a better texture. Cut the chicken breast into thin strips, add light soy sauce, oyster sauce, white pepper, and five-spice powder to marinate, then add cornstarch in small amounts several times. Finally, add vegetable oil to lock in moisture. Marinate for 20 minutes.

Heat a pan with plenty of oil over high heat. Add shallots and sauté until fragrant. Then add chicken and stir-fry until it turns white. Remove from the pan.

Heat a wok with plenty of oil over high heat. Add diced shiitake mushrooms and stir-fry until the moisture evaporates. Add wood ear mushrooms, carrots, and corn, and stir-fry for 3 minutes until the vegetables are softened.

Add the stir-fried diced chicken. Add 100ml of cornstarch slurry. Simmer for 1 minute, then stir-fry until the moisture evaporates. Add 20g light soy sauce, 5g dark soy sauce, a suitable amount of oyster sauce or MSG, and 2g salt along the edge of the pan. Stir-fry evenly and remove from heat. The filling is complete! ✅

❤️Preparing the dumpling dough: I used Xinjiang Red Star whole wheat flour, which has a wheat aroma. First, add the sourdough starter and tear it into pieces. Then add 350ml of water. Next, add 650g of flour and knead until a dough forms. Cover with plastic wrap and let it ferment. Sourdough starter ferments slowly; to speed up fermentation, add 5g of dry yeast. (Sourdough starter makes the dumplings chewier; if you don't have it, use 1g of yeast per 100g of flour.)

Chicken breast, shiitake mushroom, and wood ear mushroom buns are done! ✅
