Prepare the ingredients: Remove the kernels from the glutinous corn; finely chop the tomatoes, green bell peppers, and garlic; finely chop the scallions and ginger, add them to the minced pork, add a little salt, mix well, and stir-fry in advance. (If you don't want to eat whole scallion and ginger pieces, you can make scallion and ginger water and add it to the minced pork.)

Stir-fry the glutinous corn in an empty wok until it becomes slightly translucent (about one minute), then set it aside. Heat the wok until dry, then add rapeseed oil. When the oil is hot, add chopped green peppers and minced garlic and stir-fry until fragrant. Add diced tomatoes and stir-fry until softened (about two minutes). Add the stir-fried minced pork and glutinous corn and stir-fry for two minutes.

Season to taste with salt, and use whatever you have on hand (light soy sauce, MSG, oyster sauce); sprinkle with chopped green onions, then plate and serve.

The glutinous corn from my hometown is incredibly sticky, tender, and sweet, with a slightly sweet aftertaste when stir-fried. Fresh, tender glutinous corn can now be bought online, but you need to be careful when choosing it; the ones I bought from several vendors weren't sweet. Don't worry about not being able to finish a large quantity; you can boil the extra corn directly or remove the kernels and freeze it. Take it out whenever you want to eat it.
