Steps for making braised silver pomfret

Clean the fish, remove the internal organs, and let it dry.

Cut the fish in half and evenly coat both sides with shredded ginger, shredded scallions, and cooking wine. Marinate for 10 minutes to remove the fishy smell.

Add cooking oil to a pan and pan-fry the fish on both sides until golden brown (if you're not a skilled cook and are worried about breaking the fish skin, use a non-stick pan first 🤭).

Prepare the sauce for stir-frying and stewing the fish while frying.

After frying the fish, heat oil in a pan again and sauté scallions, ginger, garlic, and dried chili peppers until fragrant.

Add the prepared sauce and stir-fry until fragrant, then add the pan-fried fish (I forgot to take a picture of the pan-fried fish!).

Add boiling water to cover the fish

Bring to a boil over high heat, then cover and simmer over medium heat for 20 minutes (simmer longer if the fish is large).

When the time is up, open the lid, turn up the heat to reduce the sauce, and use a spoon to drizzle the broth over the fish to let it absorb the flavor.

Turn off the heat, transfer to a plate, and enjoy!
