
It's been a long time since I've had fish, so this time I'm making braised fish chunks with green peppers to replenish my protein! Throughout the year, I eat fish very few times, let alone seafood. This year, I want to discover more delicious ways to cook fish. The fish used in this braised fish chunks with green peppers was brought from my rural hometown at the beginning of the year and has been sitting in the freezer uneaten. Last time I used up some cured meat, and this time I'm going to start "using" the fish I brought, hoping to create some great dishes.

Heat the pan with cold oil, then pour in a spoonful of tea oil to coat the pan. If you have lard at home, I recommend using lard.

Next, add the cleaned fish pieces. Since I was using frozen fish, I needed to thaw it beforehand, clean it, and then cut it into pieces.

Don't touch the fish pieces yet; fry them slowly over low heat until they are set.

Then flip it over and fry the other side too. This time it still stuck to the pan 😂. I suggest sprinkling some salt before frying, or just using a non-stick pan.

Add an appropriate amount of minced ginger and drizzle with a circle of high-proof liquor.

Pour in boiling water to cover the fish pieces, then bring to a boil over high heat until the water turns milky white.

Prepare the seasoning! If using fresh fish, be sure to add enough salt at this step. This small pot can hold about 6 grams of salt. I used pre-salted fish, so no additional salt is needed. Add a little white pepper powder, and then sprinkle the chopped green peppers evenly on top.

Cover and simmer over low heat for 3 minutes. Remember, it must be simmered over low heat!

After opening the lid, add a little MSG and perilla leaves, cook for 10 seconds and it's ready to serve! In Hunan, you absolutely must add perilla when cooking fish!!! You can't cook fish without perilla, just like the West can't lose Jerusalem 😂.
