Prepare scallions, ginger, and garlic.

Pour a little more oil into the pan.

Heat a little water over low heat, add scallions, ginger, garlic, and Sichuan peppercorns, and stir-fry for a while until fragrant.

Add the fish, cooking wine, soy sauce, and vinegar, then stir-fry briefly. If the fish is prone to breaking apart, add the seasonings first, then the fish.

Add an appropriate amount of water and a small spoonful of salt, and simmer over medium-low heat. Stir occasionally during the simmering process to prevent sticking.

After simmering until flavorful, reduce the sauce over medium heat and simmer for a while longer.

Leave a little broth, turn off the heat, put it in the pot and let it simmer for two minutes before serving.
