How to stir-fry shiitake mushrooms and greens with a strong shiitake mushroom flavor: steps

Choose this type of shiitake mushroom with cracked surfaces; this variety is more fragrant.

I couldn't find shiitake mushrooms, so I chose the thick-fleshed variety. I washed them and squeezed out the excess water.

Cut into slices 1-2 coins thick

Minced garlic can be chopped into two types: coarse and fine.

Choose tender greens, wash them and drain them slightly, but don't drain them too dry. Vegetables cooked with water and oil will be more tender.

Use a generous amount of oil, as shiitake mushrooms absorb oil.

Heat oil in a pan, add coarsely minced garlic (coarse garlic is less likely to burn), and once you smell the aroma, add shiitake mushrooms and stir-fry.

Stir-fry the shiitake mushrooms so that each side is heated and you can smell the aroma of shiitake mushrooms.

Add the greens and stir-fry quickly over high heat 🔥. This will lock in the moisture and keep the greens crisp and tender.

Add a suitable amount of salt to leafy greens; those who prefer a lighter taste can add a little more salt.

Add minced garlic before serving.
